Children are not inherently opposed to food that is good for them, though many parents have the attitude that because something is healthy their child will want nothing to do with it. To get a child to eat healthy is a very simple thing, just make sure they enjoy it. Allow the child to have fun with their food. That is why products like Cheese Strings were invented. Don't force them to consume something that disgusts them just because it's good for them. Sure spinach is incredibly healthy, but if your child hates the slimy texture of cooked spinach, try giving it to them raw. If they still don't like it, don't force them to eat it.
Children should be taught to try new foods all the time, but they should not be taught that healthy food tastes bad by being forced to eat what they do not like. Not only will this promote healthy eating now, but it will help to teach them to keep an open mind when it comes to food.
Another thing that you could do is allow them to help with the preparation of meals. It's a valuable lesson in a few ways; it allows them to experience what they'll need to know as adults at a young age, it shows them that the food you take time to prepare doesn't just magically show up on the table so they appreciate you more, and it'll give them a sense of pride in what they did so they're more likely to enjoy the food.
Children are responsive people that simply need to be guided, not pets that need to be forced to learn something.
