Being a meat and potato man raised in Western Nebraska, I was used to getting up and having breakfast. I always loved hash browns and have tried many different recipes for making hash browns a different way. This is one we used to have at home a lot when I was growing up and my family has always enjoyed it too
BAKED HASH BROWNS
2 lbs frozen hash browns or fresh hash browns are even better
1/2 cup melted butter
1 can cream of chicken soup, undiluted
1 pt sour cream
1 tsp seal salt
1/2 tsp fresh ground black pepper
1 medium sweet onion, chopped
2 cups of shredded sharp cheddar cheese
TOPPING
1/4 cup melted butter
2 cups crushed corn flakes (I like to use Ritz Crackers instead)
Thaw the potatoes and mix all the ingredients together. Place them in a buttered dish. Top with buttered cornflakes or Ritz Crackers and bake at 350 F for 45-60 minutes.
Good with eggs for breakfast or as a side with some other meal
