Macaroni and Cheese was not something I grew up eating but it is something I learned to make when my children were growing up. I am a simple cook and this is a simple recipe.
Macaroni and Cheese
1 1/2 cups of uncooked macaroni
3 tablespoons flour
3 tablespoons oleo
14 slices of velveeta or other cheese food product sold in boxes like Velveeta
salt and pepper
1 cup milk
Cook your macaroni about 2-3 minutes less than called for. Drain.
Melt oleo slowly and add the flour and mix so there are no lumps.
Add milk and then add the slices of cheese one at a time and then stir. Cook slowly. Cheese will start to melt and let it cook slowly until it starts to thicken, stirring and watching it. When it has thickened, pour it into the pot with the macaroni, add salt and pepper, and stir to mix. Pour this into a buttered 8" square pan or a regular 9X5X3 pan. Bake at 350 until it starts to bubble and turn brown a little on top.
This is good served with pork such as bacon or sausage, black eyed peas or other pea or bean, sliced tomatoes or salad, bread or garlic bread, and iced tea.
