Recipes: Fruit salad

Fruit salad is one of those things that are so flexible and you can use so many different things to make the salad the way you like it.Here is a good fruit salad that really leaves it up to your preference as to what fruits you like. Any of then are good and good for you.

FRUIT SALAD
1 can Mandarin Orange segments, drained (Reserve the juices drained from the fruit)


1 can pears,diced
1 can pineapple chunks, drained
1 small jar of maraschino cherries, drained
1 pt of strawberries
1 pint of blueberries
2 bananas, sliced
1/2 cup chopped walnuts

TOPPING

1 small package of vanilla pudding (not instant)
1 1/4 cup juices drained from the fruit

Cook the pudding according to the package directions using the juices from the drained fruit. Cool and stir into the fruit.

This is a salad that can be used with just about any many course and can be used as a salad or you can use it as a dessert. You can use pecans instead of walnuts or for something a little different, use some chopped pistachios. You can use different kinds of pudding. I have used pistachio pudding, pineapple pudding and banana cream pudding that have all worked out really well.

Every time my two little granddaughters come over they ask if "Papa" is going to make fruit salad. They love it and will eat a big bowl of that to get there fruit and ask for more. All the kids and grandkids like this fruit salad and it is easy to make and can be kept in the refrigerator for a day or two. It really needs to be used fairly soon as it gets kind of watery and is not near as good as it is when it is freshly made. Whip up a batch for you family and see what kind of compliments you get.
