This is a recipe that's wonderful during the winter months and inexpensive
as well. This is also a good recipe to make in advance and freeze for later.
Cabbage Patch Stew
2 lb.ground beef
1 large chopped onion
2 stalks chopped celery
2 large cans chicken broth or chicken stock
2 cans diced or stewed tomatoes
2 cans red kidney beans
1 small to medium head cabbage chopped bite size
season with salt/pepper to taste
5 lb potatoes red skinned or Yukon gold mashed
In a large soup pot prepare as follows. Brown the ground beef on medium heat with
the onions,salt and pepper. Add the chicken broth or stock along with the tomatoes,
kidney beans,celery and cabbage. Cook until cabbage is done, then turn heat to
low. In another pot prepare potatoes mashed.
Serve stew over hot mashed potatoes and enjoy. You can also serve the stew over
baked potatoes,rice, or noodles. The remaining stew is great for freezing and like
any stew is even better the next day. We refer to this meal as comfort food.
