Every body likes something quick and easy to throw in the microwave or oven for a nutritious breakfast. One of the favorites around our house is breakfast burritos. When I make breakfast burritos I usually make 36-48 at a time and then freeze a bunch. It doesn't make any more of a mess to make that many than it does to make two.
BILL'S BREAKFAST BURRITOS
2 packages of 36 large flour tortilla (Freeze what you don't use for next time)
1 3 lb tube of Jimmy Dean sausage
1 1/2 pounds of Garlic Sausage taken out of skin and crumbled up
2 dozen eggs
4 onions, diced up
1 6 lb bag of Ore-Ida hash-browns
1 27 oz can of Hatch green Chiles
2 packages of Kraft Mexican Shredded Cheese
I usually use two big cast iron skillets and a big cast iron Dutch oven to cook the various things in and then combine them all in a big deep kettle that I have. I start out cooking the sausage in one big skillet. When it is done. I cook the onions in some of the sausage grease. Depending on how greasy or lean the sausage is you might want to drain off some of the grease. Cook the onions till they are clear and tender.
While I am doing this I beat up the eggs and scramble them in another skillet using some of the sausage grease or butter. In the big Dutch Oven I cook the hash-browns in about three batches. Make sure you grease the pan well cause hash browns tend to stick. As things get done, throw them in the big kettle adding the cheese along and keeping it stirred up.
I use the whole green Chiles and just dump the whole can in the Vita-Mix and puree them and dump it in the kettle. Make sure to mix it up good and add the rest of the cheese and mix till cheese is melted.
Open the tortillas and place the desired amount of filling on the tortillas. Fold in the edges and roll up the tortillas. Wrap in tinfoil. Depending on how much filling you put in each tortilla, this should make 36-48 burritos.
If you like them a little hotter you can add some chopped jalapenos or hot sauce. Or if these are a little too spicy, use a smaller can of green Chiles.
In breakfast burritos is the only way my grandson will eat eggs so his parents always get some as does my other daughter. They make a good quick breakfast either straight out of the freezer or take them out the night before and let them thaw and just throw them in the microwave for a few minutes. Make sure you take the tinfoil off before you put them in the microwave and cook them on about half power or they will get crispy.
