Meatloaf is a good comfort food and most everybody likes meat loaf of some kind. I like it hot and there is nothing better for sandwiches than good meat loaf. I'll take a good meat loaf sandwich in my lunch anytime. Do you like your meatloaf a little spicy? Try this Creole-Cajun meatloaf. You will never go back to regular old meatloaf again. This is another recipe that goes over big at covered dish suppers.
CREOLE MEATLOAF
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped bell pepper
2 tbsp butter
1 1/2 cups ketchup
1 lb ground beef
1/2 pound garlic sausage
1 cup soft bread crumbs
1 egg slightly beaten
1/2 tsp salt to taste
1/8 tsp black pepper
1 tsp Tabasco Chipotle Hot Sauce
Stir and cook onion, celery, and bell pepper in butter until tender.Stir in ketchup and hot sauce. Combine 1/2 cup plus 3 tbsp of the mixture with the ground beef, garlic sausage, bread crumbs, egg, salt, and pepper. Mix well and form into a loaf and place in a loaf pan. I love my Lodge Cast Iron loaf pan for this. Bake in preheated 350 F oven for 1 hour. Simmer the remaining sauce in a saucepan adding a little water or V-8 juice if needed. I like to use V-8 for the added flavor. When the meat loaf is done, take it our of the oven and let set for a few minutes. Slice the meat loaf and top each slice with warm sauce. Serve with a fresh vegetable. We love green beans or lima beans with it. Also it is really good with some good fresh out of the pan cornbread.
This is something a little different than regular meat loaf and is very popular at my house. If I was forty years younger I think I would go to school to be a Creole Chef. We love the food of Creole Country and the Creole people are so friendly and love to give you tips on how to cook Creole food.
