Recipes: Cucumber salad

There are so many ways to use the multi-purpose vegetable. the cucumber. Cucumber salad is just one of the many ways.There are probably as many recipes for cucumber salad as there are people who like cucumbers but I remember growing up that one of my Dad's Favorite salads when the fresh veggies were plentiful was cucumber, red onion or white onion, and tomato chunks. He liked this anytime but especially enjoyed it when our home garden was producing fresh ingredients. Anything made with fresh vegetables always seems to taste better than non fresh or frozen.

DAD'S FAVORITE CUCUMBER SALAD

2 medium cucumbers thinly sliced
1 large flat red or white onion thinly sliced (I prefer red)
2 medium sized tomatoes cut in about 3/4 inch cubes
4 tbsp extra virgin olive oil
1/2 cup cider vinegar
sea salt and freshly ground black pepper to taste

Place cucumbers, onions, and tomatoes in a large bowl. Mix olive oil and vinegar well and pour over the veggies. Stir well to make sure all are covered well. Salt and pepper to taste. Place in refrigerator for a couple hours to let flavors meld. Remove and enjoy. This isespecially good served with a good grilled or smoked meat . We have it a lot with smoked chicken leg quarters and it is also very good with a good meat loaf and either some crusty French bread or some good homemade jalapeno corn bread.

If you are not a vinegar person, you can substitute sour cream and or mayonnaise and make a creamy cucumber salad that is also very good.. I know that there are a lot of people who don't like the sour dressings like vinegar and the vinaigrette's. and that is every ones personal preference. I like this salad very much but on a tossed salad I much prefer a chunky blue cheese.
