Biriyani is one of the mouth watering recipes in India.It can be vegetable biriyani or non veg biriyani.
In this article i will share my recipe of vegetable biriyani.
Ingridients:
Basamati rice-2 cups
Carrot-1
green peas 3/4 cup
Beans-1/2 cup
Cabbage- (not essential)- a small piece
Tomato-1
Mint leaves-1/2 CUP
Corriander leaves chopped 1/4 cup
Green chillies-3
Ginger garlic paste-1 tbsp
Onion-1
Clove-2
Cardamom- 3
Cinnamon 1 large piece.
Ghee -2 tbsp
Vegetable oil-1/2 cup
Lemon juice-1 tbsp
Turmeric-1 tsp
Salt-as required
Water-31/2 cups
Cashews-1/4 cup.
Method:
Soak basmati rice for 1/2 an hour.Chop all vegetablesinto small pieces.Grind,mint leaves,corriander leaves and green chillies.Fry basmati rice in oil until you hear the cracking sound.Keep it aside.Now fry all cloves,cinnamon and cardamom.Then add ginger-garlic paste followed by mint leaf paste.Fry.Then add all vegetables and tomato.Fry well andadd the fried tice.Mix well add lemon juice ,turmeric powder and salt.Now boil the water and add to it.
Cook in rice cooker. Fry onions until it becomes golden brown.Fry the cashews in Ghee.After the rice is ready add cashews and fried onion.
Serve with mutton curry and salads.
Vegetable Biriyani ensures that there is adequate vegatables in the diet.Serving with mutton curry will give adequate gravy for eating biriyani.
