Scallops that are to die for. Everybody likes Lobster I think.
4. Smoked Ham A lot of people like the spiral-cut sugar cured hams like you get at Honey Baked Ham and I must admit that they are very good but...... My favorite is to get a half a ham and put it on my smoker for twelve to eighteen hours over a good mesquite or hickory smoke. I like to marinate mine with a pineapple, cherry and orange juice combination. When you get all the good smoked meat off the ham bone be sure to save it for a good pot of beans. My Dad always used to say that the best part of the ham was the meat left on the bone cooked up in a big pot of pinto beans.
5. A Good Pot of Beans Once you get the majority of the that good smoked ham off the ham bone, throw it in the Crockpot with a couple of quartered onions and two or three seeded and diced fresh jalapenos, and the pinto beans and let it cook overnight and the next day and then have it with some good cheddar cheese cornbread. It just doesn't get any better that that.
6. Pork Chops I have a recipe for some delicious crab stuffed pork chops and I like grilled pork chops but my favorite way to fix them is to cut up two onions and separate into rings. saute these till tender and browned a little. Take them out and dredge you pork chops in some seasoned flour and put them in the skillet to brown. Take the chops out of the skillet and put half the onions back. Lay the pork chops over the onions and add the rest of the onions on top. Cover with two cans of undiluted Cream of Mushroom soup and let simmer for four to 6 hours. Put that onion mushroom gravy over some good homemade mashed potatoes and you have as good a meal as you will ever have.
I am very sorry if I am making you all hungry. I know I am making myself hungry anyway.
7. Pork Ribs Ribs are another one of my favorite foods. Whether it be baby backs , a slab or ribs or the country style ribs I love them all. They are best when fixed on a smoker too. Just throw them on the grate in the smoker and let them cook for eight to ten hours or longer and about two or three hours before you take them out, coat them with your favorite barbecue sauce and let them smoke. DELICIOUS!
8. Bacon Wrapped Shrimp Stuffed Jalapenos This was originally designed as an appetizer but they are so good that we often time make a meal out of them. I have an jalapeno roaster that will roast 36 peppers at one time and I almost always make at least two batches. I need to get another roaster. Just cut the end off the
