Recipes: Chili

Chili can be very mild or almost inedible hot but no matter how you make it or like it , it is good. What is better on a cold snowy day than a bowl of homemade chili and a big cup of home made hot chocolate. There are millions of recipes for chili. There is red chili, beef chili, pork chili, venison chili, chicken chili, turkey chili or meatless chili. My brother loves to experiment like me and he likes pork green chili as do I. He has tried a lot of different combinations but this is our favorite. He is 6'6" tall and around 280 so consequently:

BIG DICK'S PORK GREEN CHILI

2 lbs lean pork roast cut into 1/2" cubes
4 tbsp flour
4 tbsp bacon grease or shortening
1 cup onions chopped (I like to use red onions)
2 cloves garlic minced
20 roasted green chilies, diced
3/4 tsp oregano
3 tsp salt
4 cups water
1/4 cup heavy whipping cream
2 jalapenos, seeded and chopped

Dredge the meat in flour. Melt the shortening in a large pot or Dutch Oven. Brown the meat thoroughly. Then add the onion, garlic and jalapenos and continue cooking until the onion is soft. Add the remaining ingredients, cover and simmer for 2-3 hours. Stir occasionally. Remove cover and simmer another10-15 minutes.

Serve with flour tortilla or cornbread.

There is a Mexican Restaurant here in Denver that has the best pork green chili and it has won many awards from various groups. They have been in business over fifty years and they freeze this chili and literally ship it all over the world to people who have lived in Denver and then moved.We laugh about it because the best Mexican restaurant in Denver is owned by the Lundstrom Family A Scandynavuan family and Mexican food.Red or Green it doesn't really matter. I love good chili.
