Walnut and Raisin Oatmeal
Ingredients:
5 to 10 walnuts per serving
1 teaspoon of raisins per serving
Old Fashioned Oatmeal (better) or Quick Cooking Oatmeal (good)
Optional Ingredients:
milk
cinnamon
brown sugar
honey
maple syrup
Utensils:
spoon to stir
measuring cup
teaspoon
pan for on top of the stove
a cereal bowl for each person-that can withstand heat
a spoon for each person-that can withstand heat
optional: tablespoon, non-reactive knife
Directions:
1. Check the side of the box to see how much water you need for the number of servings. Add 1/4 cup more water per serving to reach the same consistency.
2. Measure out the water using the measuring cup and pour into the stove-top safe pan.
Turn the stove on high, when the water begins to boil, turn down to simmer.
3. Break-up walnuts with your hand or use a knife that won't react to the oils in the walnuts. Use 5 walnuts per serving for a mild walnut taste. Use 7 for a stronger taste or 10 walnuts for the strongest taste. Allow to cook for 1 minute.
4. Put 1 teaspoon of raisins into the water and continue simmering for 1 more minute.
5. Add the correct amount of oatmeal for the number of servings and continue cooking according to package directions.
6. When cooked, take off the stove and pour into serving bowls. Try it the way it is. It's flavorful and delightful.
If you would like to add more flavor, shake cinnamon on top and stir throughout the bowl. If you would like sweetener, add a teaspoon of brown sugar, honey, or maple syrup (go light on these sweeteners, they have their own natural taste). Some people enjoy a quarter to half a cup of milk in it, too. My husband and I have the original recipe without additions or sometimes with cinnamon. I like it with milk sometimes and without milk other times.
Super Walnut Raisin version: Double the amount of water, put your walnuts and raisins in, cook down until the water has reduced by half. Then cook your oatmeal in that water. The flavor is absolutely amazing!
Gatherer version: You may substitute any gathered nuts. Some nuts may have a stronger flavor than others. Black walnuts, pecans, and butternuts will do well with either version. Almonds and hazel nuts are better with the Super version.
