I actually came up with this recipe after trying to put a new spin on a simpler kind of salmon croquette. I like it because it's delicious and not hard to make at all. I really hope that those of you who try it find it just as enjoyable as I do!
INGREDIENTS
1 - 18 oz. can of salmon
1/4 cup chopped onions
1/4 cup chopped bell pepper
1/4 cup Italian breadcrumbs
1 teaspoon garlic salt
1 teaspoon black pepper
1 egg
1 1/2 cup Italian breadcrumbs
Vegetable oil
DIRECTIONS
1. Drain the juice from your can of salmon and remove the bones.
2. In a frying pan, heat your vegetable oil. I usually pour until it's about 1/4 to 1/3 inch thick from the bottom of the pan.
3. In a medium bowl, mix your salmon, 1/4 cup chopped onions, 1/4 cup chopped bell peppers, 1/4 cup Italian breadcrumbs,1 teaspoon garlic salt, 1 teaspoon black pepper, and 1 egg. You can add more or less garlic salt or pepper as you like. Form into patties.
4. In a separate bowl, pour 1 1/2 cups Italian breadcrumbs. Use this to evenly coat your croquettes on both sides, then place in hot oil.
5. Fry until lightly browned on both sides. Drain on a paper napkin.
6. Enjoy!
-You can decide what to serve these with depending on your own tastes. I get picked on for it, but I personally enjoy these with cocktail sauce...but then again, I'm a big fan of cocktail sauce...
