What is simple and what is tasty may be a matter of debate with various people but then that is what makes the world go around. What a boring world it would be if everybody liked the same thing. Can you imagine everybody eating roasted stuffed jalapenos? Well I could but I know a lot of people that dont like anything hotter than ice.
This is one of the tastiest and relatively simple recipes I have found and tried in a long time. Loving jalapenos and shrimp this seemed to me like a perfect combination and judging from the way they disappear when ever I make them, people must agree with me.
If you like them as much as my family does the you need to get you an jalapeno roaster. Makes things a whole lot easier and a whole lot less messy. I got mine online through Cabelas. In fact I am seriously considering getting a second one.
Mine is stainless steel and does a great job and is easy to clean up. Give these a try. Some people might not think they are simple but I am pretty sure 99% of you will agree that they are tasty.
CAJUN SHRIMP STUFFED JALAPENOS
36 jalapenos, larger ones work better, slit lengthwise but not cut into and the seeds and veins removed.
STUFFING
1/2 lb of cooked shrimp deveined and minced
2 tsp mayonaisse
2 tsp chili sauce
2 tsp capers minced
2 tsps green onions minced
2 tsps fresh parsley minced
1 tsp Dijon mustard
1/2 tsp horseradish
1/4 tsp salt
1/4 tsp paprika
1/4 tsp black pepper
Thoroughly mix all the stuffing ingredients and chill them for 1 hour. If you don't like shrimp, crab and lobster work very well too. I like to wrap mine in a good slice of bacon. If you don't like seafood a good sausage will work fine too.
Fill the slit peppers with the stuffing. If you are going to wrap them with bacon, this is the time to wrap them , and then stick toothpicks soaked in water through the peppers in a couple of place to hold them closed. If you don't soak the toothpick they will burn up and drop your jalapenos through the grill.
Place them on the grill or in the jalapeno roaster. If you are doing the grill you will have to turn the peppers often and cook them till they are done. In the roaster they will need to cook for about an hour. If you wrap them in bacon, cook till the bacon is done.
These are very tasty and imake a great appetizer to munch on while the steaks or bugers are grilling. We love them and I have six jalapeno plants growing in the backyard right now. I could make a meal out of these and not need any other thing except a cold one an maybe some good potato salad.
