Tips for buying wild game

Both when I lived in Europe and when we lived in New Hampshire, did we encounter friends that would get their annual license to hunt for wild game, not that I was a proponent, but I must say that I never shied away from a well prepared deer stew, pheasant, elk or even moose filet. I checked with my dad in Holland, whose family still lives in Germany how they would go about buying wild game as they always had some great rabbit stew (hassenpfeffer), fantastic duck or goose (usually reserved for special occasions). One of the things he reminded me was to initiate a good rapport with the local butcher, so if you are lucky enough to have one in your neighborhood "giddyap " as Kramer would say, and get acquainted.
While living in New Hampshire we had a friend Nigel who was at the top of the list for road kill in the area and although I know it sounds harsh, but during season we had a fair amount of moose and deer walk unto roads and regrettably get killed, and so he had the opportunity to pick up the animal and feed his family. We often got invited to his house as he tried out new recipes on us the unsuspecting dinner guest.So if you don't know your local butcher, find a friend like Nigel who had first hand knowledge or go online to such websites as www.nickyusa.com, cookwildgame.com etc.
