Recipes: Summer desserts

Desserts have always been one of my favorite things and this is a particularly good one. Doesn't everyone like something that is light, cool and refreshing on a hot summer afternoon? It is summertime. It is hot outside. Most everybody likes lemonade. It is refreshing. Here is a very refreshing treat that my family loves. We sit out on the deck in the late afternoon and enjoy this or a variation there of a lot of times during the summer. Thanks to Betty Crocker for the original recipe which I have altered to use sugar free and low fat products. There is no reason even if you are a diabetic that you can't enjoy things like this. Just use Splenda and low-fat things.

PINK LEMONADE PIE


Graham Cracker Crust

1 1/2 cups finely crushed graham crackers
1/3 cup butter melted
3 tbsp splenda

Filling

1 qt. of light vanilla ice cream
1/2 can (12 oz size) frozen pink lemonade, thawed
1 container low fat frozen whipped topping
Red food coloring if desired
Lemon or lime peel if desired

Heat the oven to 350 F. In a medium bowl, mix all crust ingredients until well blended. Press in the bottom and up the sides of a 9" pie plate. Bake 8-10 minutes or until golden brown. Cool

In a large bowl mix the ice cream, lemonade concentrate, whipped topping, and a few drops of red food coloring. Spoon and spread ice cream mixture into cooled crust.

Freeze until firm about 4 hours. let stand at room temperature a few minutes before serving. Garnish with lemon peel.

I have used this recipe and substituted limeade or orange juice and it has worked out very well too. I have thought about trying grape, pineapple and cranberry but haven't yet. You could probably use some combinations that would be real good and different too. That is one thing I really enjoy is coming up with new ideas and combinations of other recipes.

If you don't have to worry or don't care about sugar, calories or carbs use regular ice cream, sugar, and regular whipped topping. I really can't tell any difference and it is sure a lot less calories and carbohydrates.
