This salad pairs well with the garlic bread I have also included. You may note that this is not for those watching their cholesterol and weight in general. It is however very tempting, for who can resist bacon and tomato together?
Spinach, Blue cheese and Bacon Salad
Ingredients:
lb. baby spinach leaves (washed and patted dry)
10 cherry tomatoes (washed and cut in half)
3 thin slices red onion (cut slices in half and separate)
8 slices bacon (fried, drained and crumbled)
cup bacon drippings
1 cup blue cheese (crumbled)
cup balsamic vinegar
1 teaspoon garlic juice
Combine bacon drippings, balsamic vinegar and garlic juice. Whisk together well. Keep warm.
Lightly toss tomatoes, spinach and onions pieces together in a bowl Place on salad plates.
Crumble blue cheese and bacon on the top of salad.
Drizzle with dressing and serve at once.
The Best Garlic Bread
Ingredients:
Amount of ingredients will depend on how much you are making. Start with the same amount you would usually use to butter your bread and go from there.
French bread (slice in half lengthwise)
Garlic Juice (Trust me the juice works better than the paste or chopped)
Melted Butter (Margarine can be substituted)
Italian Seasoning (Oregano, thyme, basil, etc.)
Mix equal amounts of garlic juice and butter
Lightly toast bread (about 4 or 5 minutes in hot oven)
Spread with garlic juice/butter mixture
Sprinkle with Italian Seasoning.
Return to HOT oven and toast again (Bake don't broil for a nice crunchy bread)
This can be made on the grill also and is great with more than just pasta.
Best when served hot but is still good when cold.
