Recipes: Making creative use of beans

Cheesy Green Bean Casserole

This casserole is a classic when you're feeding a crowd, and easy enough to make two and keep one in the freezer for yourself. Family-style dish with a crunchy topping that compliments the cheesy green beans perfectly. Enjoy this one folks, every calorie is worth it.

Cheesy Green Bean Casserole
Serves 6-8

2 10-oz pkgs. frozen cut green beans
2 Tbsp. butter
2 Tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1 Tbsp. sugar
1/2 pt. sour cream
1 medium onion, grated
1/2 lb. Swiss cheese, grated
1 cup grated sharp cheese
1 cup crushed cornflakes
2 Tbsp. butter, melted

Cook green beans according to package directions. Combine butter, flour, salt, pepper, sugar and sour cream in a saucepan. Cook and stir, adding onion, until mixture thickens. Combine beans with sauce; pour into a buttered 1 1/2-quart casserole dish. Cover with grated cheeses; top with crushed cornflakes. Drizzle melted butter over entire dish. Bake at 400 degrees for 20 minutes.
