Tips for buying wild game

The number one rule for buying wild game to buy young and tender birds or animals.

When it comes to birds its quite easy to determine freshness; the legs should be smooth and the feet and beaks should be pliable. If the bird has already been plucked, you can check for pliability by feeling the backbone.

Another important thing to consider is whether that animal is in season - is it the correct time of year to be hunting it? There are specific rules governing the hunting of wild birds and animals, not just to conserve the species in a responsible way, but to ensure that those that are killed are not too young. Wild venison is about the only frozen game I would recommend buying, for everything else buy in season and buy fresh; that is the only way to guarantee good produce.

In Britain there are clearly laid out seasons for grouse (12 August - 10 December), partridge (1 September - 1 February), pheasant (1 October - 1 February). Pigeon can be hunted all year round as can quail.

Wild rabbit can be hunted all year round but the hare season is between September and March. Snipe is in season between August and January, wild duck between August until March.

Buy from a good dealer; a good dealer will know all about the birds and animals he or she is selling. They will know how it has been killed and how long it has been hung. The amount of hanging time does alter the flavour and the retailer may have meat that has been hanging for different amount of time so he can offer you a choice depending on how strongly flavoured you like the meat.

If you are unsure about the origins of a bird or meat do not buy it; you can get farmed or frozen game at reasonable prices which would be better if you have any doubts.

However, by talking to your local retailer and knowing what is in season, you can make good purchases of the best wild produce.
