If you like salad, and have never tried this, it is a must! It is easy to make, too!
For two people (the recipe can be expanded for more) you need:
1 head romaine or other leaf lettuce (not head lettuce)
4-6 slices bacon
Vinegar to taste
Tomatoes (optional)
Shredded carrots (optional)
Chopped green onion (optional)
Begin by frying the bacon fairly slowly. While it is frying, chop the leaf lettuce and place it in a bowl. Include the chopped or shredded tomatoes, carrots, and green onion if you choose to have these in the salad. When the bacon is done, remove it from the pan and drizzle the hot grease over the salad. Toss lightly and add vinegar to taste (I usually add roughly twice as much vinegar as there is bacon grease.) Chop or break up the bacon and add it to the salad.
This is a walking piece of heaven like Marty Robbins never dreamed of!
