On the go: Preparing a healthy breakfast in 5 minutes

Ever had those mornings where you want something yummy, but just have no energy to make it? I'm sure we all have. Well, here's a super simple solution that will take as long as it takes to toast a piece of bread. There are two variants, one for those which toaster ovens, and one with those for just regular toasters, but the beginning starts off the same.

You'll need two eggs, two pieces of bread, a slice or two of cheese, a bit of half and half (or cream or milk, whichever you prefer), any meat you prefer (optional, of course) a saucer or plate and a glass measuring cup.

Crack two eggs into the measuring cup and beat them with a fork until mixed well. Add a bit of half and half, enough to just lighten it up a tad (in a 2 cup glass measuring cup, the half and half will bring it up to about 2/3 cup), and set aside.

Toaster variant: Toast your two pieces of bread. While they're toasting, put your egg mixture in the microwave (keep it in the glass measuring cup, no need to cover) for 30 seconds. Then take it out, stir a few times with your fork, and stick it back in the microwave for 45 seconds. Don't worry, the egg won't overflow! Set aside, and retrieve your toast. If you chose to put meat on your sandwich, put that on the bread, and the cheese on top of that. Stick it in the microwave on a plate or saucer for 25 seconds (give or take, depending on your microwave) to warm your meat and melt your cheese. Make sure to either leave it open faced, or only put your meat and cheese on one piece of bread, and leave the other aside. Retrieve, get the now cooked egg out of the measuring cup and add it to the sandwich, and you're done!

Toaster Oven variant: Put your meat, if you chose to do so, on one piece of bread, topped with your cheese. Put the sandwich, open faced in the microwave oven until bread is toasted, meat is warmed and cheese is melted. This will take a few minutes. In the mean time, put your egg mixture in the microwave (keep it in the glass measuring cup, no need to cover) for 30 seconds. Then take it out, stir a few times with your fork, and stick it back in the microwave for 45 seconds. Don't worry, the egg won't overflow! When both that and the rest of your sandwich is done, put it together and voila!

This really is a great way to make an egg sandwich, I personally prefer the toaster oven variant, but both come out delicious! The egg comes out really fluffy. It's great for kids who aren't able to use the oven but still want something that taste great, plus they'll get a kick out of watching the egg rise in the microwave - I know I did!
