Cake Baking tips and Secrets to a perfect cake:
Cake is one of the most widely versatile desserts you can make. Cakes can be as simple as yellow cake to as elaborate as a wedding cake. With millions of different ingredients that can be added into the mix. However making your cake perfect can be difficult i.e., to much air bubbles in the cake making it split at the top, or even the cake sticking to the pan and destroying the cake. I will give you tips to make your cakes perfection!
The most important thing about cake baking is greasing and flouring the cake pan. However before doing that trace the bottom of your cake pan on a sheet of wax paper. Then grease the bottom of the pan and place the wax paper at the bottom, then proceed with greasing the whole pan and flouring it. The wax paper guarantees that the bottom of your cake won't get stuck to the cake pan, and also holds the cake together when placed on the cooling rack.
The second most important step is after you have the cake poured into the cake pan(s)you lift the cake pan up about 1-2inches from your preparation surface and then drop the pan 3-5 times to get rid of excess air bubbles in the cake. Too many air bubbles in the cake result in the top of the cake splitting open and creating a dome cake top.
The third most important step is to place the cakes on a cooling rack. The first 15 to 20 minutes the cake should still be in the cake pan on the cooling rack. After 15-20 minutes place the just the cakes on the cooling rack, and wait until cakes are completely cooled before frosting. If it is a very hot day you may want to place cooled cakes in freezer to make cakes easier to frost and keeps the frosting from melting.
The fourth most important thing is before you frost the cake you rub the crumbs and excess flour from the cake pan(s) off of the sides of the cake. By doing this you give yourself a smooth and easy surface to place frosting on.
