When planning the menus for picnics, barbecues, summertime gatherings we think of light, but tasty items. Chicken and apple salad is a great filler for breads, pitas or even as a dip for whole wheat crackers. These recipes one with a tart apple, one with a sweet apple will appeal to all comers.
Tart Apple Chicken Salad
2 cups cooked skinless chicken breast, cubed
1 stalk of celery, diced
1 medium unpeeled Granny Smith apple, diced
1/4 cup raisins
1 tbsp lemon juice
1/4 cup low fat yogurt, drained
1/4 cup fat-free mayonnaise
1 tsp curry powder
Make sure the yogurt does not have an excessive amount of water or it will dilute the recipe. Make sure the cooked chicken breast has no residual fat remaining and cut into cubes. Chop the celery and apple into small enough pieces so they do not become obtrusive in the salad. This is to be placed on the medium bread, pita, or crackers - to not overpower the rest of the salad. Place these ingredients along with the raisins into a medium size bowl. Stir them all together.
Mix the lemon juice, curry, yogurt, and ff mayonnaise into a small bowl. Blend until smooth. Add to the chicken mixture and stir until everything is blended. Make sure this stays cold either in the refrigerator or in a very cold ice chest before serving.
Sweet Apple Chicken Salad
This recipe requires a little more prep time, but I guarantee you it is well worth it!
1 large Fuji apple, washed and diced
2 cups diced, cooked, boneless, skinless chicken breast
2 tablespoons finely chopped jalapeno pepper
cup drained nonfat plain yogurt
1 teaspoon orange juice concentrate, defrosted
Pinch of rosemary, crushed
1 teaspoon lemon zest
1 teaspoon fresh ground black pepper
Remove any traces of fat from the chicken. Dice into cubes. Place in a large bowl. You can leave the peel on the Fuji apple to increase the fiber content of the recipe. Dice the apple into 1/8 inch pieces and place in bowl with chicken.
In a small bowl, add the yogurt, juice, and spices. Mix well and set aside.
Add the jalapeno, rosemary, lemon zest, and pepper to the yogurt mix and pour over chicken. Blend well. You are now ready to put this on a beautiful tossed green salad, use as a dip, or use as a sandwich filling.
