Recipes: Chicken & apple salad

Weary of that scary mayo based Waldorf Salad? Here's a safer and less fattening version with loads of flavor.

Ingredients
1 cup boneless skinless chicken breast meat, diced
1 cup granny smith apples, cored and diced
1 cup seedless green grapes, halved if you like
1/4 cup finely diced celery
1/2 cup red cabbage finely diced or shredded
1/4 cup dried cranberries
1 cup plain or vanilla yogurt
1/4 tsp cinnamon
1/8 tsp cumin
3 tbs lemon juice
1 tbs sugar
pinch of salt
1/4 cup each toasted walnuts,almonds, and chow mien noodles

Start by tossing first 6 ingredients in a large bowl

In another bowl mix the next 6 ingredients until smooth adjusting sugar and salt to taste

Coat the salad with the dressing and top with nuts and chow mien noodles

This Salad is great as is, over a tossed salad, or in a wrap. The best part is it will not spoil like the mayo based versions and is virtually fat free (sans nuts).
