Quick and easy low fat southwestern chicken and rice bake
Ingredients
1-4 boneless skinless chicken breasts
1 16 oz jar of your favorite salsa
1/2 cup instant rice (or adjust based on number of servings required)
1 lime - zest it then juice it
1 cut cilantro chopped
1/2 cup sharp cheddar cheese
water
This recipe can be adjusted for 1-4 people.
Preheat oven to 350 degrees (use toaster oven for a single serving if you have a small baking dish to fit)
Place desired number of chicken breasts in center of an oven proof baking dish.
Scatter rice in pan around chicken
Read directions on the rice container for correct ratio of rice to water based on the number of servings desired. Measure out water accordingly in large measure cup or bowl.
Into water add lime juice,zest, salsa, and cilantro.
Stir mixture and pour over rice and chicken
Cover tightly with foil and bake 25-45 min. (based on number of chicken breasts) or until juices in chicken run clear and most of liquid is absorbed.
Remove foil, sprinkle with cheese and bake 10-15 min. until cheese us melted and bubbly.
