The easiest Southwest Salad you'll ever make.
Ingredients:
1 can black beans, drained & rinsed
1 small bag frozen white or shoe peg corn, thawed
1 lg jar of your favorite tomato lime salsa with cilantro
1 package cooked southwest flavored chicken strips(such as Perdue Short Cuts)
For a simple side salad just combine ingredients in a large bowl, stir to combine, and chill.
For burritos fill a large flour tortilla with the mixture(heated)and top with shredded cheddar cheese.
For a casserole layer corn tortillas, the mixture, and lots of sharp cheddar cheese lasagna style in a large baking pan.
Bake covered at 350 degrees for 30 - 40 min. uncover, top with more cheese and bake until cheese melts- 5-10 min.
More veggies? Use this mixture to top your favorite garden salad and finish with crushed tortilla chips.
Want more dressing? Place a small jar of salsa in your blender with the juice of 2 limes and a hand full of fresh cilantro. top off with tomato juice (or V-8) and puree until smooth. Like it sweet? add a teaspoon or two of cumin. Like it hot? add your favorite chili pepper, chopped.
