Have you ever had one of those summer days when you felt it was just too hot to eat? You know that you need to eat, and it should be something other than ice cream, but you can't face the thought of cooking. Instead of making a hot meal, a nutritious and refreshing chicken and apple salad is what you need. It can be eaten on a bed of salad greens, on a bagel, in a pita, on bread, or on crackers.
I have tried many different chicken and apple salads, but my favorites have always been the ones that keep it simple. The kids always like the ones that do not have a lot of exotic flavorings in them as well. My absolute favorite is one that I adapted from my mother-in-laws recipe.
Easy Low Fat Chicken and Apple Salad
Ingredients:
12 ounces cooked chicken breast, cut into 1/2 inch chunks
1 cup Granny Smith apples, cored and diced
1 cup red seedless grapes, quartered
1/2 cup chopped celery
1/4 cup diced green pepper
1/2 cup slivered almonds
1 cup low fat mayonnaise
1/3 cup honey
Whisk the mayonnaise and honey together until well blended. Add the remaining ingredients and gently toss until well coated.
You can serve this right away, but I prefer to put it in the refrigerator for at least an hour. I typically will make this in the morning if I plan on having it for lunch or after lunch if I plan on having it for supper.
The next time you are feeling too hot to eat go ahead and try this recipe. I can guarantee that you will find it refreshing, and much more nutritious than that bowl of ice cream.
