Meatloaf is a comfort food that many have shied away from due to the high fat content. Meatloaf does not have to be a high fat food. With a few substitutions, and the right cooking equipment, you can once again find comfort in meatloaf.
One of the best investments you can make to ensure a low fat meatloaf is to buy a meatloaf pan that has a built in rack. They look like a pan within a pan. The inside pan has holes on the bottom, allowing the fat to drain away from the meat, and sits higher than the outside pan. After cooking, when you take the inside pan out any additional fat will be drained away before serving.
Low Fat Meatloaf
Ingredients:
1 1/2 pounds lean ground beef
1 cup fat free bread crumbs
1/2 cup minced onions
1/2 cup diced green peppers
2 egg whites
1/2 teaspoon fresh ground pepper
1/2 teaspoon salt
1 teaspoon oregano
8 ounces tomato sauce, divided
Preheat oven to 350 degrees.
Setting aside half of the tomato sauce, combine all remaining ingredients in a large bowl mixing well. The easiest way to mix meatloaf well is with your hands.
Put the meat mixture into the meatloaf pan. Bake for 1 hour or until the meat is brown and the juices run clear. Pour off any liquid and cover evenly with the remaining tomato sauce.
Return to the oven for 5 to 10 minutes or until the sauce is hot. Remove from oven, slice into 8 pieces, and enjoy a little comfort.
