Vegetarian recipes are great to have when you are a vegetarian or just want a meal without meat.I find it is nice to do a all vegetable meal.

Potato and Asparagus Tortillas
-
1 lb.asparagus ,cut into 3/4 inch lengths (about three cups)
1 TBS.plus4 tsp. of olive oil
1lb.of Yukon Gold potatoes.sliced thin (about 2 3/4 cups)
1 large onion ,halved and thinly sliced (about 2 cups)


3/4 tsp.salt
8 large eggs
1/4 tsp ground black pepper
1 cup grated manchego cheese

Steam asparagus until tender three to five minutes and cool
Heat 1 TBS.oil in large skillet over medium heat. Add potatoes,onion and 1/4 tsp salt. Cook 3 to 5 minutes or until potatoes begin to brown.Stir often Cover reduce heat to low,and cook 20 minutes,or until tender,stirring occasionally. Remove from skillet.
Beat eggs and remaining salt and pepper in bowl.Stir in cheese and asparagus.
Add 2 tsp. oil to skillet and increase heat to medium low.Pour in half of egg mixture.Sprinkle with half of potatoes, and cook 3 to 5 minutes or until bottom of tortilla is browned.Remove skillet from heat and invert large plate over tortilla .Grip skillet sides and plate with oven mitts,and flip tortilla onto plate.Return tortilla to skillet browned side up and cook one to two minutes more until bottom is brown.put on serving plate and repeat with remaining oil,eggs and potatoes.Slice each tortilla into 12 thin wedges serve with salsa and cheese. 163 calories per serving.9 grams. of protein,9 grams of total fat,13 carbs.



top it off with a great smoothie

Soy smoothie base
-
1/2 cup soft silken tofu(about 4 Oz's)
2 tbs.maple syrup or honey
6 ice cubes
3/4 cups Mango juice
1/2 cup frozen peaches
3/4 cup mango sorbet
and 2 tbs. lime juice

Place all this into blender and blend till smooth.Pour into two glasses and serve.
