Meatloaf may not be seen as fine dining, but it is a tasty comfort food, and doesn't have to be fatty and unhealthy. This recipe makes flavorful, moist meatloaf - the cottage cheese may seem odd, but trust me, in this recipe, it works! You can't really taste it, it's just there to keep the meatloaf from drying out..
You will Need:
1 pound ground turkey
1 pound lean ground beef
1 egg
2 egg whites
1 tablespoon minced garlic
1/4 cup low fat cottage cheese
1 tablespoon salt
1 tablespoon Kitchen Bouquet (a browning and seasoning sauce)
1 sleeve saltine crackers
1/2 onion chopped
1/4 green pepper chopped
For the Gravy:
2 cans tomato soup
1 cup water
To Make (in oven):
1. Preheat oven to 400 degrees farenheit. Put turkey, beef, eggs, garlic, cottage cheese, salt, and the seasoning sauce in an ungreased, 13 x 9 baking pan.
2. Place crackers in a food processor and make crumbs. Sprinkle into baking pan. Chop onions and sprinkle into baking pan, then do the same for the green pepper.
3. Mix all the ingredients, seperate into two loaves. Cover with foil and bake for 1 hour.
4. Remove cover and drain fat. Mix tomato soup with water and pour over loaves. Return to oven for 15 minutes, uncovered.
To Make (in Crockpot):
1. Mix the ingredients the same as in baking. Place in bottom of crockpot, cover, and cook for 6-8 hours on low. If you cook for the whole 8 hours, it'll be more flavorful.
2. Mix tomato soup with water in a saucepan, bring to a boil, and pour over meat before serving.
