Traditional recipes for classic spinach dip contain everything from full-fat sour cream, mayonnaise, and cream cheese, to bacon, or even Alfredo sauce! All of these are saboteurs of the essential healthiness of the spinach, and can quickly turn this into a recipe for disaster. The addition of small amounts of such wonderful things as garlic and Parmesan cheese in this recipe, ensure that the flavor is robust while the fat content is not so heavily laden. This version is sure to be a recipe you can count on to satisfy traditionalists as well as health conscious foodies!
Luscious Low Fat Spinach Dip
3 cloves garlic, roughly chopped
2 tablespoons olive oil
2 packages frozen spinach, thawed and drained
1 small bunch green onions, sliced
1 1/2 cup plain low fat or fat free yogurt
1/2 cup freshly grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup low fat or fat free mayonnaise
First, in a small skillet or saucepan, you will saute the garlic in the olive oil until lightly browned.
Then combine the garlic and all of the remaining ingredients in a food processor, processing until smooth. Adjust the seasoning if you need to.
At this point, you can transfer the dip to a serving dish and refrigerate while you prepare the accompaniments. Popular choices may include fresh veggies, low fat pita bread, or whole wheat crackers. Any way you spread it, this dip is so good it will be gone!
