This Mexican chicken casserole is very easy to make and tastes great!
Boil up 2-3 chicken breasts and cut into cubes.
Mix the cubed chicken with a jar of medium salsa. Add a can of diced tomatoes to this mixture
Line a pan with Doritos or generic corn chips if you prefer them.
Top the Doritos with the chicken and salsa mixture
Cover the entire thing with a package of Mexican cheese blend(regular cheddar cheese works also, but I prefer the Mexican blends)
Bake in a 350 degree oven for 10-15 minutes or until cheese is melted. Spoon into bowls and top with a dollop of sour cream.
