Ah, the college years - a time to drink excessively and pull all-nighters. Who has time and money to cook? But alas, with this recipe you will save both and have an amazing meal to show for it.
Every family has their favorite dish that is a staple of almost every meal. That staple for me and my college roommate of three years was breaded chicken. It's great if you are just looking to make a quick dinner before studying for the finals, and it is equally as appropriate to make for Super Bowl/Birthday/Insert-A-Holiday-Here parties. Breaded chicken is a must-try recipe for every college student on a budget. It is easy to make and absolutely delicious!
Ingredients:
1.5 lbs chicken breast
2 eggs
Ritz crackers (smashed) or bread crumbs
Slices of Provolone cheese
Preparation:
1. Empty the crackers into a Ziploc bag and crush them. If you are using bread crumbs, your job is already done for you!
2. Whisk eggs in a bowl and dip chicken breasts in egg, then in crumbs.
3. Bake for 30-35 minutes at 350 degrees.
4. Place slices of cheese on top of chicken during the last 5 minutes of baking. Take the chicken out of the oven once the cheese melts.
So here it is. A delicious and satisfying meal that won't break your bank and will leave you with a few dollars to spend on school supplies. Yes School supplies
