Recipes: Spaghetti

Spaghetti Primavera
Delicious, warm, cheesy spaghetti dish that is perfect for a quick dinner.

You will need:
1 box spaghetti [use whole wheat for added health benefits and a richer flavor!]
2 tablespoons olive or vegetable oil
2 cups zucchini, thinly sliced (OPTIONAL)
1 cup red pepper, cut into strips or chopped
1 cup green pepper, cut into strips or chopped
2 cloves garlic, minced
1/2 cup whipping cream
1/2 cup grated parmesan cheese, divided
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper

How to make:
1. Cook spaghetti according to directions on box; drain.
2. While spaghetti is cooking, heat oil and saute zucchini, red and green peppers, and garlic in a large skillit until vegetables are just tender.
3. Stir in cream, then 1/4 cup parmesan cheese and seasonings until evenly blended.
4. Heat through until slightly thickened, being careful not to boil.
5. Toss hot cooked spaghetti with sauteed vegetable mixture. Serve sprinkled with remaining parmesan cheese.

Serves: 6-8
