Quick and Easy Cheese Cake
Ingredients:
TO MAKE BISCUIT PIE SHELL
1 pkt tennis biscuits or any other thin plain biscuits.
3 tablespoons butter
1 teaspoon vanilla essence
Crush biscuits and mix with butter, add vanilla essence. Press mixture into the bottom of a round baking tin. Also press mixture into the sides of the tin to form a shell for the cake mixture.
TO MAKE CAKE MIXTURE
1 cup (250ml) cream, beaten slightly
1 cup (250ml) creamed cottage cheese
1 pkt vanilla instant pudding
Mix cream and cottage cheese together. Add vanilla pudding.
Pour into biscuit pie shell and chill in the fridge.
Before serving decorate with slices of tinned fruit or finely crumbed biscuit.
This is a quick and easy recipe if you need to feed unexpected guests.
