The summer would not be complete without elderflower cordial and sparkling water. It sums up the English summer. It is light and not alcoholic. It can be added to any fresh fruit juice for a refreshing grown up drink that you can have and still drive.
Making elderflower champagne is well worth the effort as is the cordial
Elderflower Champagne
4 heads of elderflowers (just opened)
1 lemon grated rind and juice
2 tablespoons white wine vinegar
1 and a half pounds white sugar
1 gallon cold water
Take flowers off the stems and mix all the ingredients.
Leave for a day and then strain.
Put into bottles and cork carefully, the4y can be explosive!
Lay on their side and drink from a fortnight when the champagne should be sparkling upto 3 months.
Drink neat or with fresh fruit juices
