Recipes: Lemon Butter

Herbed butter is an easy way to inject great flavor to breads, meats or vegetables. This recipe can be made in advance and the butter can be stored in the freezer and defrosted minutes before serving.

Two sticks of unsalted butter at room temperature
One teaspoon of lemon zest
One teaspoon of fresh herbs, finely chopped. The options for herbs are endless. Here are a few examples to try: rosemary, oregano, thyme, basil, chives, parsley, tarragon, sage, garlic


One pinch of course sea or kosher salt
One 12 inch by 12 inch section of plastic wrap

Mix all of the ingredients in a small bowl until the butter is creamy and soft. Taste for seasoning and adjust salt or herbs accordingly. Scoop the butter down the middle of the plastic wrap in one long line. Carefully fold the ends of the wrap until the ends meet. Neatly roll the wrap until you have a cylindrical-shaped package about an inch in diameter. Twist ends of plastic so butter doesn't ooze out. Store in freezer until frozen. Remove from freezer 30 minutes before serving so butter has time to melt. Slice into half inch discs.

Here are a few serving suggestions.

Over Vegetables: slice a few medallions of the butter over just steamed vegetables for a silky texture and a boost of flavor.

Over Grilled Meats: slice a few discs of the lemon herbed butter over grilled fish, chicken breasts or even steak.

Over Eggs: Top scrambled eggs with a slice of the fragrant butter for unforgettable eggs.

On Bread: Slather toasted bread or sliced baquettes with a bit of the lemon butter for a quick, delicious appetizer.

Inside Burgers: on loosely formed burger meat, insert a butter disc and form into a burger around the disc. Cook as usual on grill or pan. The burger will be tender, juicy and ooze with flavor.
