I do not believe that a single-sex school would have any bearing on how well a child learns. The ability to learn is partially hereditary and partially instilled in a child's first few years. However, it is not uncommon for any form of mental trauma to cause any kind of learning disability.
I think it is often misconstrued that a more educated child is a superior learner. Typically, single-sex schools are private. That generally allows for stronger budgets. More money affords both a higher quality of teacher, and a stronger curriculum. Also, private schools generally have smaller classes, allowing much more one-on-one time with each student. This will typically produce a "more educated" student.
I personally, went to both a private school and a public school. I have three sisters that were all taught at the same all-girl private school. One of them was a naturally gifted learner that achieved high marks and excellent test scores, although that came with considerable effort. My second sister, buried herself in her books only to achieve mediocre grades, and mediocre test scores. My last sister, was held back one year in high school, and did not score well enough, or achieve high enough grades to be able to go to a college she was interested in. I, was also held back when I switched from public to private due to curriculum differences. After repeating sophomore year and then returning to public school during my junior year, I was bumped back up to being a senior and placed into higher level senior classes to balance the curriculum. But did I learn any better? No. I achieved average marks with very little effort, and test scores that exceeded my first sisters without any studying.
There may be several variables that cause one child to be a stronger learner over the other, but single-sex schooling is most definitely not one of them.
