An old friend of mine just got a job delivering ravioli to local markets around the metro area,after the day is done he collects all these sample packages of ravioli he was unable to get rid of and of course in time naturally ,when the old fridge gets jammed , and his girlfriend, mother and sister can't take another bite the old Ravioli king commits the humane act of dropping them off to me. Now I have tofind a recipe that I'm not bored with so if anyone is interested in a cheese ravioli with coriander pesto grab a pen and keep reading.
Cheese Ravioli With Coriander Pest
1 Garlic clove
1/4 teaspoon of salt
2 Ttablespoons of chopped walnuts
1/2 cup of chopped coriander or parsely leaves plus coriander
1/4 cup of olive oil
2 tablespoons of freshly grated parmesan
1/4 pound of fresh or frozen cheese ravioli (I just happen to have a freezer full of frozen, how about that?)
Mince and mash the garlic to a paste with the salt.
In a blender or a food processor grind together the walnuts and the chopped coriander,add the garlic paste. the oil, and the parmesan, and blend the mixture until it is combined.
In a pot of boiling water ,boil the ravioli for 10 or twenty minutes, or until they are tender. rserve 1/4 cup if the cooking liquid, and drain the ravioli.add the reserved cooking liquid to the coriander mixture and blend the pesto until it is smooth.
In a bowl toss the ravioli with the pesto,divide them between 2 heated plates, and garnish each with a coriander sprig.
This recipe serves 2. I however have enough ravioli for 20 more people..... and not enough pesto.
