There are two basic types of kayaking, but for the most part the equipment is the same.
First there's pleasure kayaking. This is a leisure activity where you can paddle alone or in a tandem boat around lakes and the ocean. Pleasure kayaks come in two styles, so the type of kayak you choose will depend on depend the body of water you're traveling in.
In the narrow single or double seat pleasure and sea kayaks, paddlers sit in the hull (the bottom of the boat). These kayaks are perfect in calm water with rolling waves no bigger than two feet to three feet.
A sit on top, also known as unsinkable kayaks have a deck you sit on. These kayaks were designed to allow the paddlers to exit and enter the water at water level. In other words you can easily climb in and out if you're swimming.
The next type of Kayaking is sport related. These kayaks tend to be shorter and stockier to make quick turns and rolls for river running, and wave riding. The main equipment difference for sport kayaking is the use of a helmet because of injury should you hit a rock.
The best accessory for a kayak is a foot guided rudder. Rudders are usually sold separately, but man what a difference they make. They put the pleasure back into pleasure kayaking. Without the constant need to steer, the paddler can relax and often let the wind take them.
Another great accessory is a skirt. A skirt keeps the water from coming into the boat which makes for a dry "bottom" which is very desirable of you are taking a long trip or in cold waters.
Of course there are paddles too. Straight paddles help propel and guide the kayak in tight spaces, like on a river or narrow inlet. Curved paddles will propel you faster in open water, but don't do as well to maneuver the boat quickly.
Another luxury among kayakers are wheels or a carry cart. If you portage with kids this is a necessity. When my toddlers would toddle away all I had to do was carefully lay the kayak down to get them which would have been extremely difficult if I was carrying it on my shoulders. It also helps because you can carry some of your stuff inside while you hike, and enjoy the sky above.
As far as life jackets go, there are jackets specifically for kayakers, but if you're outfitting a child, tire easily, or are not a confident swimmer be honest with yourself, because kayak jackets won't keep your face out of the water if you're unconscious, or panicked. You may want to consider, a marine type jacket which is meant to keep you afloat and prevent drowning.
Kayaking is a wonderful activity. Wildlife viewing from these quiet sleek boats is inevitable, so pack up, ship out and enjoy.
