Ahi Tuna Salad
Article: This one came about as part of my endless quest to persuade my little ones to eat fresh seafood and vegetables. My wife thinks this one is very, very male. Be that as it may, it looks great and tastes great. Be sure to use quality olive oil.
Ingredients:
1 lb Ahi Tuna
20 oz Soy sauce
32 oz extra virgin olive oil
2 tomatoes, diced fine
1 half avocado, sliced
12 cloves garlic, chopped fine
8 oz cilantro
1/2 cucumber sliced extremely thin
1 cup malt vinegar
1 tablespoon parsley
Sear your tuna fish on the barbecue, or on a griddle. Combine olive oil, soy, garlic, vinegar, parsley and cilantro into a dressing (save a little parsley and cilantro for the topping). Marinate the avocado and tomatoes in the dressing. Pile cucumbers on top of tomatoes. Cut seared tuna fish into four pieces and place on top of cucumber. You should end up with a nice approximation of a mountain. Sprinkle the precipice with your leftover parsley and cilantro.
