A standby in my house, often requested by my 7 year old son. There aren't any measurements to keep to, just common ingredients around my house that when put together seem to work well.
Fingerling Potatoes (white/red/purple you choose)
Olive Oil (the good stuff)
Roasted Garlic
Sea Salt
Cracked Black Pepper
Fresh Rosemary
Parmesan Cheese (fresh grated if possible)
This really can't be easier. Wash the potatoes, cutting them in two if much larger than the average. Dry them thouroughly. Place in a bowl with olive oil to coat, chopped roasted garlic and finely chopped rosemary. Sprinke with salt and pepper to taste. Spread them in a single layer on a sheet pan (use parchment if you're worried about sticking). Put them in a pre-heated 350 degree oven and let them go for about 20-25 minutes.
I typically will serve this with a nice grilled steak or double stuffed pork chop. If you have room in the oven add another sheet of roasted asparagus with just the oil, salt and pepper.
