My favorite cuisine would have to be Eastern Indian. There are so many different amazing ways of cooking in India with all the spices and colors and flavors, but my favorite, and in my own opinion, the most sophisticated of them all has to be North Indian.
The delicacies of Northern India, which are a complete thrill to all the senses with their exquisite flavors and spices, were first brought to India by the conquering Mughals. From the influence of the Mughals came Punjabi and Kashmiri cooking which are delicately spiced and not so hot.
Punjabi cooks have been called the best cooks in India; Famous for their tandoori (cooked in super hot clay ovens) and delicious sweetmeats. Also, unlike a lot of Indian cuisine, Punjabi cuisine tends to use more wheat like naan or chapatti instead of rice.
Now on to Kashmiri, which was influenced even more by the Mughals that even the Punjabi style, are known for their meats (unlike most of India which is mostly vegetarian). Also, unlike most cooks in India, Kashmiri cooks do not use garlic and onions to thicken their curries which make them the closest thing to heaven on earth.
A very important aspect of all Indian cooking is Ghee, or, clarified butter and is used by both Kashmiri and Punjabi alike.
This info is just barely skimming the surface of Punjabi and Kashmiri cooking; A summary, if you will, that will hopefully prompt you to look further into the wonderful flavors, vibrant colors, and sensual tastes of North Indian food.
