1 large onion
1/4 cup oil
1 chicken, cut up (3 lbs)
1 can of tomato soup
1 large can of diced tomatoes
1 T. salt
2 tsp. pepper
1 T. cumin
1 tsp. garlic powder
2/3 of a small box of Uncle Ben's Long Grain White Rice
Preheat oven to 350 degrees. In a large frying pan, saute onions till softened. Add chicken and brown on all sides. Add rest of ingredients EXCEPT rice. Simmer about 45 minutes, till chicken is done.
Remove chicken and place on jelly roll pan or baking sheet with sides. Put chicken in oven to crisp up.
Stir rice into frying pan ingredients then cover and simmer 20 minutes, until rice is done. Serve chicken on top of rice.
This recipe is pretty spicy. Adjust seasonings to your taste. Enjoy!
