Red Bean Feta Salad
This recipe is a refreshing and delicious summer salad, perfect for an active day.
INGREDIENTS
*
SALAD
1 head cabbage, finely chopped
3 green onions, minced
1 can red kidney beans, rinsed well
1 tbs fresh chopped parsley
1 cup of feta cheese, herbed or otherwise

DRESSING
1/3 cup lemon juice
1/3 cup olive oil
1 dash garlic powder
salt and pepper to taste

DIRECTIONS:
1. Mix the cabbage, green onions, parsley, beans and feta in a large bowl.
2. In a separate container mix lemon juice, olive oil, garlic powder, salt and pepper.
3. Pour dressing over salad.
4. Cover and refrigerate for at least 1 hour.
5. Serve cold.
