Whether or not you can make God change His mind is not really the question, as no one can make anyone else change their mind. The question is can the God of the Old or New Testament ever change his mind and the answer to this question is yes.
We all are familiar with the story of Sodom and Gomorrah. Yes, it does not turn out well but God's prophet argues with God about the terms under which God will spare the destruction he has planned for the inhabitants. While the required number of righteous men is not found and I personally find it hard to describe Lot himself as a righteous man since he offers up his virgin daughters to the crowd pounding at his door, we must take the words of later Prophets and Apostles that Lot was indeed a good man.
The god of the Old Testament is stubborn and vengeful, but we cannot say that His Will as it were is always set in stone. The issue becomes even more complex when the New Testament enters the equation. The Old Testament God is full of fire and brimstone zeal and an eye for an eye mentality. The New Testament God all of a sudden comes forth with a message of love and peace and moreover a much more passive and effective when it's tried method of resistance. The message here isn't if you don't please Him you'll suffer extremely but that he loves all mankind and is willing to forgive.
We must assume that the God spoken of in both the Old Testament and the New are both the same entity, but there character is vastly different. It is possible he went through anger management classes in the 400 years that separate the Bible's parts, but either He changed his mind or how people perceived him changed. It is most likely a manifestation of both things happening over time.
