Using capers in your cooking

A caper is a biennial spiny shrub that bears a fleshy rounded leaves and big white/pink flowers. A caper is a bud of this plant which is usually pickled or salted. It is native to the Mediterranean and is usually found in rocky costal areas or growing wild on walls. It is actually very closely related to the cabbage family.

They bear a very sharp mustard like peppery flavour. When using salted capers, ensure that you rinse them thoroughly, as with pickled capers ensure they are drained properly before using.

Capers are lovely whether used whole or chopped coarsely in dishes. They are the key ingredient when making Tartare Sauce and are used widely for a great many dishes. They go well with Smoked Salmon especially and also on Pizza, Pasta and in Salads. Anchovies also go really well with capers. Capers are also often substitued for Olives in drinks such as a Martini.
