Fava Beans are amazing! This dish is easy, inexpensive and healthy.
serves 2
Ingredients:
2 cans of fava beans, drained
1 onion chopped
6 cloves of garlic
2 Bay leaves
3 cups of veggie broth broth
1 bunch of Kale, stems removed
4 garlic cloves, chopped
olive oil
Method: Combine beans onion whole garlic cloves, bay leaves salt pepper and broth and boil for 45 min, or until garlic is soft enough to be mashed with a fork. Meanwhile blanch the Kale (toss in boiling water for 1 min. Drain the beans, reserving the liquid, and mash the mixture with a fork, leaving a few of the beans intact. Now, saute the chopped garlic in olive oil for a minute and add the kale for another minute. To serve, place the Kale on a bed of the fava beans and drizzle some of the reserved fluid over it.
As a variation, try using broccoli raab instead of Kale. If you cant find Fava beans the dish is still good with great northern beans, but favas are the best.
