I love easy recipes which are tasty and quick to prepare. It's spaghetti with smashed olives & garlic. I also use anchovies in this recipe as it lends a wonderful saltiness and when cooked looses that fishy flavour.
You will need (serves 2-3)
300g spaghetti, cooked Al dente and drained
crushed or finely chopped garlic (to taste)
1 x small deli tub of ligurian olives (or any other good black olive)
6 x anchovy fillets
chopped flat leaf parsley
Parmigiano Reggiano
Good Olive oil
1. Smash olives with the back of a wooden spoon
2. Gently saute garlic until fragrant. Add anchovies and fry for another minute. Add smashed olives and cook for another minute.
3. Toss olive mixture through spaghetti with a generous handful of parsley.
4. Serve with shaved parmesan and enjoy!
