Recipes: Cooking for two

My husband is so funny when it comes to cooking. Just in the last year or so, he has started cooking supper for me on the days I work. I don't get home until 7:45pm and he wants to eat supper together. After 24 years of marriage and me doing all the cooking, this is really nice.

He loves the toaster oven and the deep fryer. At first, he was cooking a half of bag of fries or tots. Enough to feed four or five people but I didn't say anything because I didn't want to hurt his feelings. I know how hard it is to just cook for 2 people.

We have found frozen foods that are really good and just the right portions. Hormel has Pot Roast, Pork Roast and Meatloaf that's just the right size for 2 people. Country Crock has mashed potatoes, mac. & cheese and others that are just the right size and easy for my husband to heat up. My husband is really picky so if he likes these things, I will continue to buy them.

I do have some trouble with desserts though. My husband likes sweets but I usually have to throw out cake because it doesn't get eaten before it drys out. Cooking is a lot easier these days with all the pre-cooked meals that are available.
